DIY Pancake and Waffle Mix – EASY!

A couple of years ago, I made a post about a few DIY mixes. I love having DIY mixes on hand for brownies and muffins.  It saves a lot of money compared to the store.  Plus, as our family has grown, we need several packs of muffin mix just for breakfast.  It makes more sense to make a mix in bulk and have it on hand so I can make the right amount.

But, my original post was missing one important mix.  Pancake mix!  I love a good fluffy pancake and light, yet crispy, waffle.  But, gosh, making my own mix wasn’t quite working out.  I couldn’t get the combination right.  The pancakes were fluffy butting bitter from too much baking soda, or were heavy pucks of bread.  But…

I am pleased to FINALLY bring to you a delicious, kid tested, mother approved, easy, DIY Pancake and Waffle Mix.  It rivals that Bisquik taste and simplicity that us 90s kids grew up on.  And they are SO fluffy.  So, instead of being one of those bloggers that makes you scroll for AGES to actually find the recipe, I’ll post it right here!

PANCAKE/WAFFLE MIX

12 cups flour

3/4 cup sugar

3 tsp salt

9 TB baking powder

6 tsp baking soda

 

Yes, you could do all this with whole wheat flour.  But I’m not quite that willing to sacrifice taste for health to that degree, ha!  So I do 8 cups white flour and 4 cups whole wheat.  Much more than that and I think the pancakes would start to be heavy.

Annie helps me grind up some wheat into wheat flour so we can add it to our mix!

To turn the mix into pancakes, you add 1 cup mix, 1 cup milk, 1 egg, and 1 TB oil (or melted butter).  To turn the mix into waffles, add: 1 c mix, 1 c milk, 1 egg, 1/4 c melted butter and a dash of vanilla.  Of course, you can always add blueberries or chocolate chips if you like.  The pancake recipe makes about 10 4-5″ pancakes.  The waffle recipe makes 4 waffles in my Belgian waffle maker press.

And, if you haven’t already busted your diet with those, consider making some homemade donut holes!  Add 1 c mix, 1/2 cup milk, 1 egg, and a dash of vanilla.  Then roll small pieces into a ball and plop into some hot oil until browned on all sides.  Roll in powdered sure or top with frosting and sprinkles.  YUM!

  1. We made homemade *bisquick * mix in je high home ec . That was around 50 years ago. I wish I would have kept up with it.
